Mix first four ingredients with your fingers. Will be grainy. Slowly add water, stirring with fork until it forms a ball.
2 cups flour
3 egg yolks
2 tsp. Salt
...1/4 to 1/2 cup water
Knead on floured surface. Cover. Rest 30 minutes. Divide in half. Roll out to desired thickness in 2 large circles. Place one on top of the other; roll up. Cut to desired width. Leave on counter for at least one hour before using. Remember to use lots of flour for rolling, etc.
