Rice Pudding.
Made
instant rice pudding for the first time tonight. I followed the recipe
on the back of my instant rice box. Its really good! Here is the
recipe. I have 6 children so I doubled it.
Ingredients
1 c instant rice
2 1/2 cups milk
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 c sugar
1/4 c raisins (I omitted because I didn't have any)
2 eggs, slightly beaten
1/2 tsp vanilla
Cooking Directions
In saucepan, combine rice, 2 cups of milk, salt, cinnamon, nutmeg, sugar, and raisins. Bring to a rolling boil, stirring constantly. Reduce heat; boil slowly 10 minutes, stirring occasionaly. Mix eggs with remaining 1/2 c milk. Slowly add to hot mixture, stirring vigorously with a fork. (I used a whisk) Cook over medium heat until thickened. Add vanilla. Let cool 10 minutes.
I messed up and added all my milk at once. So when it was time to add my eggs, I beat them into some more milk and added some corn starch so it would still thicken and not be runny. Make sure you don't add all your milk at the beginning like I did. So good! That was super easy and the kids are going to love it.

Instead of the plain chocolate chips in the filling, I used mint cups (think reese's with mint instead of PB) and then in the glaze I used peppermint mocha creamer instead of heavy cream.....really sweet and heavy but super yummy!

Rarah's Cookies:
So, it's really easy. I use a cake-mix cookie recipe- it's standard and works across the board. I used a Butter Pecan cake mix:
1 package of cake mix (any flavor)
1 large egg
1/4 cup of oil
1/4 cup of water
Baked the cookies at 350° for 15 minutes.
While baking, I took dried apricots, chopped them and brought to rolling boil in 1/4C agave syrup (you can use refined sugar) and about a 1/4 cup water- candied the apricots. Once rolling boil begins, make sure you turn it down to about a 2-3 on the stove. You should have some syrup along with the candied apricots by the end of the process.
After removing the cookies, immediately spoon apricot syrup onto the cookies. Let sit for 5-7 minutes.
Now, you want to you vanilla almond bark- cook entire bar for 90secs.
Dip your cookie tops into the almond bark. While still warm, place a single candied apricot on the top. Allow to cool (I placed mine in the fridge).
The combination of flavors was really good!!

Cram Cheese Sugar Cookies
Cream Cheese Sugar Cookies:
1 c. butter/margarine
3 oz pkg. cream cheese, softened
1 c. sugar
...1/2 tsp. vanilla
1 egg yolk
(cream together all of the above in that order, then add...)
2 c. flour
1/2 tsp. salt
Stir until well-blended, then refrigerate a couple hours. Do NOT eat the dough. ;o)
Heat oven to 375* F. On lightly floured surface, roll out the dough to about 1/8 " thickness and cut with floured cookie cutters. (I've also rolled the dough into balls and flattened them with the bottom of a glass dusted with powdered sugar.) Bake on ungreased cookie sheet for 7-10 minutes at 375*. Cool completely, then frost/decorate.
Recipe makes 5 or 6 dozen, depending upon the size of your cookies and how much dough you taste-test. Be sure you allow the cookie sheet to cool before putting the next batch onto the pan. (A hot pan melts the dough too quickly.)

Paper Bag Apple Pie
Paper Bag Apple Pie - From my "new" Amish cookbook
6 cups coursely sliced or chopped apples
1/2 c sugar
2 Tbls flour
......1/2 tsp nutmeg
2 Tbls lemon juice
Measure apples into a bowl and mix them with the sugar, flour, nutmeg and lemon juice. Turn them into an unbaked pie shell and pat them down evenly.
Topping
1/2 c butter
1/2 c flour
1/2 c brown or white sugar
Measure out the butter, flour and sugar, cutting in the buter with a pastry blender until crumbs are the size of peas. Sprinkly evenly over the apples and pat it down around the edges. Slide the pie into a brown paper bag and fold the end under the pie. Put onto a cookie sheet for easy handling. Bake at 425* for 50 minutes
The benefit of this method is a pie with no scorched rim, no under-baked apples, no boiling over in your clean oven and no grief in general
