Bruschetta Bread

I was going to tell you guys about a poor man's bruschetta I did and it turned out pretty good. I buttered one side of pieces of bread and then sprinkled mozzarella cheese on them and then toasted them in the oven. It a bowl I mixed a can of diced tomatoes, some Italian salad dressing and some minced garlic. When the bread was toasted I sprinkled the tomatoes on top and ate it with my spaghetti like garlic bread. It was good. Some day I'll make REAL bruschetta.

Super Moist Banana Bread

What you need:

1/2 cup virgin coconut oil; you can use butter
1 cup yogurt cheese, or cream cheese ( I used sour cream)
1 cup brown sugar
1 egg
2 bananas, medium sized one
1 1/2 cups flour
1 t soda
1 t baking powder
pinch of salt
What you need to do:

Heat oven to 350. Line a loaf pan, with parchment paper. Sift the dry ingredients together in a large mixing bowl; set aside. In a mixing bowl, beat the coconut oil or butter on medium speed, until soft; about 7 minutes. Add the yogurt cheese, and continue beating on medium speed, for 3 minutes. Add the sugar, and beat on medium speed, until fluffy; 5 minutes. Add the egg and bananas, mix until combined. Add the dry ingredients, mix on medium speed, until combined; about 3 minutes. Pour into the loaf pan. Bake for 45 – 55 minutes. Each oven is different, start checking at 45 minutes. You want the bread to be golden brown, and a knive will come out clean, when you slide stick it into the middle of the loaf. Serve. Eat.

Chocolate Cake



‎2 cups sugar
1 3/4 cup all purpose flour
3/4 cup cocoa (the better the cocoa the better the cake)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla
1 cup boiling water

sift together sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, milk, oil, and vanilla. Beat on medium speed for about 2 mins. Stir in the boiling water. The batter will be very thin but it's right. Pour into 2 9 inch greased and floured pans. Bake 30-35 minutes until done in the center @ 350 degrees.

Christmas Crack





4 oz saltines
1 C butter
1 C Dark brown sugar (there's the key)
4 oz saltines
2 C Semisweet chocolate morsels
3/4 C chopped pecans

Preheat oven to 400°. Spread saltines in even layer on a baking sheet.

In saucepan- combine first two ingredients. Very slowly, heat until mix reaches 270°-275° (about 30 minutes). Cook slow- harder caramelization like candy.

Immediately pour over saltines. Bake at 400° for 5 minutes. Remove from oven and sprinkle with chocolate morsels. Spread and then allow to completely cook before cracking.

Cinnamon Rolls in the Breadmaker

Cinnamon Rolls (with a bread machine)
1 C milk
1 egg
4 Tbs butter/margarine
3 1/3 C flour
3 Tbs sugar
1/2 tsp salt
1 1/2 tsp bread machine rapid rise yeast OR 2 tsp active dry yeast

Filling:
1/4 C butter, melted
1/4 C sugar
2 tsp cinnamon
1/2 tsp nutmeg

Frosting:
1 C powdered sugar
1-2 Tbs milk
1/2 tsp vanilla

*add all roll ingredients to bread machine, set for dough cycle (may need to add a touch of flour during the cycle if its too sticky)
*when cycle is complete, turn on to lightly floured surface and knead for 1 min then let rest for 15 min
*roll dough into a rectangle (its HUGE, lol), spread melted butter over dough within 1" of edges
*sprinkle remaining filling ingredients over top butter (SEE BELOW***)
*roll dough up tightly on the long side, sealing edges
*form into a 12" evenly shaped roll (i don't really do this, i just make sure its even looking)
*slice with a knife or dental floss 1" pieces
*place pieces into a greased 13x9 pan cut side down
*cover and let rise in a warm place for 30-45 min
*bake in a preheated oven 375° for 20-25 min, until golden brown
*cool in pan on rack for 10 min, then drizzle with frosting

***i do NOT spread the butter and the sprinkle the other filling ingredients on the dough. i like it more 'evenly flavored' so i melt the butter and then mix into the butter the sugar, cinnamon and nutmeg then paint it on the dough. its a tad messy when cutting the rolls, but just so much better flavored!

Quick Bread

Quick Bread

1 c flour
1tsp salt
1T sugar
1 pkg yeast

Mix up all in medium bowl add 1 c warm water + 1/4 cup olive oil
Mix together and will be kinda soupy - add 1 c flour to mix
and mix again.
Flour counter and place dough on counter, sprinkle top with flour. Knead for about 3 min. Let rise 1/2 (quick rise yeast) to 1 hour in 85 degree oven in a greased bowl lightly covered with plastic wrap until double in size. Punch down & pull out of bowl form into a braid or a oval loaf or whatever. Set in warm oven again for 1/2 an hour to 45 min until doubled again. 
Set oven to 375 and cook on cookie sheet for 30 minutes.

Fresh Artisan Bread


Fresh Artisan Bread
3 C. warm water
1 1/2 T yeast
1 1/2 T coarse salt
6 1/2 C. flour
Mix the water, yeast, and salt together, then add the flour and mix (I use my Kitchen Aide with a dough hook) Let the dough sit at room temp for 2 hours. After that you can save the dough (loosely covered) in the refrigerator for up to 2 weeks. Whenever you want some fresh homemade bread, you just cut off a chunk of dough, shape it, let it rest at room temp for 40 min and then bake it at 450 for 30 min.
The bread tastes great plain but you can also add herbs and such to the dough to add a little variety.

Olive Cheese Bread


Olive Cheese Bread---YUMMYYYYYY

Ingredients

* 1 loaf French Bread
* 6 ounces, weight Pimiento-stuffed Green Olives
* 6 ounces, weight Black Olives
* 2 stalks Green Onions (scallions)
* 1 stick Butter, Room Temperature
* ½ cups Mayonnaise
* ¾ pounds Monterey Jack Cheese, Grated

Preparation Instructions

Roughly chop both black olives and pimiento-stuffed green olives. Slice green onions into thin pieces.

Combine butter, mayonnaise, cheese, olives and green onions in a mixing bowl. Stir together until thoroughly combined. Spread mixture onto French bread that has been sliced lengthwise. Bake at 325ºF for 25 to 30 minutes or until cheese is melted and browning.

Mixture can also be refrigerated (up to two days) and used as a dip. Great with Keeble Club crackers.
