Veggie Pasta
roasted cut up Tomatoes, summer squash, Sliced Red onion, Garlic, that were tossed in EVOO with Salt/Pepper/Italian seasoning and threw them in the oven @425 degrees,
then i cooked the pasta and after those were done and still hot i mixed the veggies in and threw a couple of handfuls of spinach in the mix.. then i covered it a let it sit a few minutes, served in bowls with some parmesian and served with bread. =)
