Peanut Butter Cookies:

Preheat oven to 325. Mix 1 cup smooth peanut butter, 1/2 cup sugar and 1 egg until well blended. Roll into 24 balls and place on ungreased cookie sheet. Flatten with fork. Bake 15 min or until lightly browned. Do not overbake. Makes 2 dozen cookies

Rarah's Cookies:
So, it's really easy. I use a cake-mix cookie recipe- it's standard and works across the board. I used a Butter Pecan cake mix:

1 package of cake mix (any flavor)
1 large egg
1/4 cup of oil
1/4 cup of water

Baked the cookies at 350° for 15 minutes.

While baking, I took dried apricots, chopped them and brought to rolling boil in 1/4C agave syrup (you can use refined sugar) and about a 1/4 cup water- candied the apricots. Once rolling boil begins, make sure you turn it down to about a 2-3 on the stove. You should have some syrup along with the candied apricots by the end of the process.

After removing the cookies, immediately spoon apricot syrup onto the cookies. Let sit for 5-7 minutes.

Now, you want to you vanilla almond bark- cook entire bar for 90secs.

Dip your cookie tops into the almond bark. While still warm, place a single candied apricot on the top. Allow to cool (I placed mine in the fridge).

The combination of flavors was really good!!
