Zucchini Boats
you cut the zucchini in half lengthwise....scoop out the insides and put them in a bowl. brown and drain 1 lb ground beef (some people prefer sausage or chicken, so whatever you guys like) in a large pan, saute onion, garlic (or garlic powder), and green pepper, and carrot, salt... & pepper....when it gets soft, add in the zucchni, ground beef, and 1/3 can of diced tomatoes and green chilis and cheddar cheese (however much you want) It will be a little watery, so add bread crumbs until it is thicker and not runny. Put the filling back into the raw zucchini halves and cover with mozerella cheese and parmesan cheese....bake at 350* for 30-40 minutes until cheese is nice and browned and zucchini is tender
