Lekky's Noodles

Lekky's Homemade Noodles

2 C flour
3 eggs
2 tsp salt
mix together, well. it will feel grainy

add 1/4-1/2 C water. mix until dough is formed, form into ball

flour counter top generously, knead a few times
cover with towel to rest for 30 min

after 30 min rest divide dough into 2 balls.
roll one ball at a time on a heavily floured surface
roll very thin, cut with pizza cutter into strips
flour noodles and let dry at least one hour (all day works the best or over night--the dryer the better)

repeat with ball #2 (and i sometimes take ball #2, roll and cut it, then roll it in wax paper and freeze for another meal bc 1 ball most times is enough for us)

fill pot with just enough water to cover the noodles, bring to a rolling boil (has to be a rolling boil or they do not cook right)
add noodles (flour on them and all!)
cook at a rolling boil for 15-20 min
