Beth's Vegetarian Chili

Hearty Vegetarian Chili

1 med butternut squash, peeled and cut into 3/4 in cubes
2 med carrots, diced
1 med onion, finely chopped
1 can 28oz tomatoes diced with juice
2 cans black beans, rinsed and drained or 4 cups soaked cooked and drained black beans
1 can chopped green chilis with liquid
1 cup veg or chicken stock
3 T chili powder
1/2 tsp salt
1/4 cup chopped fresh cilantro
sour cream

In cooker, combine squash, carrots, onion, tomatoes, black beans, chilis, stock, chili powder and salt.
Cook on Low for 6-8 hours or High for 3-4 hours until hot and bubbling.  Add cilantro and cook on high for 15 - 20 minutes.
