Jambalaya Casserole


Jambalaya Casserole (so yummy)

* 1 large onion, chopped
* 1 large green pepper, chopped
* 1 celery rib, chopped
* 4 garlic cloves, minced
* 1/2 cup butter
* 1 pound fully cooked smoked sausage, cut into 1/2-inch slices
* 3 cups chicken broth
* 2 cups uncooked long grain rice
* 1 cup chopped fresh tomatoes
* 1/2 cup chopped green onions
* 2 tablespoons and 2 teaspoons minced fresh parsley
* 1 tablespoon Worcestershire sauce
* 1 tablespoon hot pepper sauce
* 1 teaspoon salt
* 1 teaspoon pepper

1. In a large skillet, saute the onions, green peppers, celery and garlic in butter until crisp-tender. Place in a large bowl; stir in the remaining ingredients.
2. Transfer to greased shallow baking dish. Cover and bake at 375 degrees for 30 minutes or until rice is tender, stirring twice.
