Pepper Pizza

head of dill (in jars with sliced cucumbers - I do spears.) & 2
garlic cloves (I used the minced garlic in the jar you buy at the store -
put about a tsp. in each quart).
Then bring to boil: 1 cup canning salt, 4 quarts water, 1 quart white vinegar. Pour solution over the 'cukes' - let jars cool uncovered for 10 minutes.
Put on lids and rings. Put in oven at 200 degrees for 15 minutes, then lower temp. to 150 degrees and leave jars in for another 45 minutes. Put jars directly on the oven rack, and NOT on a cookie sheet! After the time is up, shut off oven and let jars sit til they are cool. Store or put in the refrig. to get them good and cold. DELICIOUS!
*.pantry is fine....they just eat through them quickly so they put them all in the fridge

Rice Pudding.
Made
instant rice pudding for the first time tonight. I followed the recipe
on the back of my instant rice box. Its really good! Here is the
recipe. I have 6 children so I doubled it.
Ingredients
1 c instant rice
2 1/2 cups milk
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 c sugar
1/4 c raisins (I omitted because I didn't have any)
2 eggs, slightly beaten
1/2 tsp vanilla
Cooking Directions
In saucepan, combine rice, 2 cups of milk, salt, cinnamon, nutmeg, sugar, and raisins. Bring to a rolling boil, stirring constantly. Reduce heat; boil slowly 10 minutes, stirring occasionaly. Mix eggs with remaining 1/2 c milk. Slowly add to hot mixture, stirring vigorously with a fork. (I used a whisk) Cook over medium heat until thickened. Add vanilla. Let cool 10 minutes.
I messed up and added all my milk at once. So when it was time to add my eggs, I beat them into some more milk and added some corn starch so it would still thicken and not be runny. Make sure you don't add all your milk at the beginning like I did. So good! That was super easy and the kids are going to love it.

Bruschetta Bread
I was going to tell you guys about a poor man's bruschetta I did and it
turned out pretty good. I buttered one side of pieces of bread and then
sprinkled mozzarella cheese on them and then toasted them in the oven.
It a bowl I mixed a can of diced tomatoes, some Italian salad dressing
and some minced garlic. When the bread was toasted I sprinkled the
tomatoes on top and ate it with my spaghetti like garlic bread. It was
good. Some day I'll make REAL bruschetta.
