Beth's Hearty Beef Goulash


Hearty Beef Goulash

1/4 cup flour
2 tsp paprika
1 tsp salt
1/2 tsp black pepper
1/2 tsp thyme
2 lbs stewing beef cut into small cubes
1 T veg oil
3 cups beef stock
1 sm 7.5 oz tomato sauce
2 onions, chopped
2 cloves garlic
1 cup diced carrots
1 cup chopped celery
2 potatoes, peeled and diced
1 bay leaf

Combine flour, paprika, salt, pepper and thyme in a bag and add beef to coat.
Heat 1/2 the oil in a large skillet and add beef in batches and cook until browned all over.  Put into crock pot.
Add the rest to the pot and cook on low for 8 - 10 hours or High 4-6 until vegetables are tender. Remove bay leaf and serve.
